Abstract
This article provides an overview of surfactants. Various types of surfactants, their physicochemical properties, such as CMC, Krafft point, cloud point are described. Types of surfactants and their applications in cosmetic/consumer products, pharmaceuticals, foods and petroleum are discussed. Key performance aspects of surfactants including foam stability, emulsification, and rheology modification are also discussed.
